Sauce feuilles de manioc

Nombre de Personnes : 4

Temps de Préparation : 20 minutes

Ingrédients:

  • 250g de feuilles de manioc pilées ou mélangées,
  • 250g de viande de bœuf (ou toute autre viande), coupée en cubes
  • 3 cuillères à soupe de pâte d’arachide
  • 200 ml d’huile de palme (ou d’huile d’arachide)
  • 1 poisson, le tilapia ou le maquereau
  • 2 oignons, finement hachés
  • 3 gombos, finement coupés
  • Du piment, ajustez selon votre goût
  • Du sel, selon votre goût
  • 2 cuillères à soupe de crevettes séchées ou des écrevisses, pilées
  • 3 tasses d’eau (750ml) 

Noter que le rajout de la pâte d’arachide est facultatif mais peut donner un goût très agréable à la sauce.

Direction:

Pour cette recette, je vous recommande d’utiliser une marmite profonde, surtout si c’est votre première fois.

Étape 1: Ajoutez la viande avec le poisson dans la marmite, le sel et 2 tasses d’eau, puis portez à ébullition pendant 5 – 10 minutes. Lorsque le poisson est prêt, vous pouvez le retirer.

Étape 2: Ajoutez les feuilles de manioc dans la casserole. Attendez encore 5 minutes, juste pour faire bouillir les feuilles pendant un petit temps.

Étape 3: Ajoutez une autre tasse d’eau et la pâte d’arachide dans la sauce.

Étape 4: Ajoutez l’huile de palme, l’oignon et le piment. Puis laissez mijoter pendant 25 minutes.

Étape 5: Retirez les os du poisson déjà préparé et ajoutez dans la sauce, puis salez à votre goût.

Étape 6: Ajoutez les crevettes ou du poisson séché et le gombo. Remuez bien et laissez mijoter pendant 10 ou 15 minutes. Ne pas oublier de remuer de temps en temps jusqu’à la cuisson complète.

Quand c’est prêt, servez avec du riz et Bon Appétit!
